Employees must wash hands and put gloves on prior to working with any ready to eat foods.
Store in the walk-in cooler with ready to eat products, or in the freezer until needed.
Open bag with a clean parring knife and place pork in clean half pan.
Break apart pork by hand
Add 8oz spoodle to pan
Place lid with utensil hole on pan
Add date label to pan
Add 1 to 2 tablespoons of cooking oil to saute pan or flat top and set burner to medium high heat
Once saute pan or flat top is properly heated, add 8oz of pork
Break apart with black tongs and cook to sear the outside
Add splash of water to expedite cooking and prevent burning
Heat to 165 degrees or greater
Add to 1/6 pan and place in hot table with 2oz spoodle
Open bag with a clean paring knife and place pork in clean half pan.
Break apart pork by hand.

Place in the back position furthest from the grill. Do not store below.

Carnitas may be reheated once in the rethermalizer. Mix 50/50 with new carnitas for best flavor.
