To determine whether to use a full taco container, or just half a container, you will need to know if the customer is dining in or taking it to-go.
Carry out:
Use full container.
Dine-in:
Use half container.
Steaming the Tortilla
Begin with a steamed 6" tortilla and a hard taco shell.
Add Queso
Hold the taco flat in your hand and use a ladle to apply half a ladle (1 oz) of Queso to the inside of the tortilla.
Add a Hard Shell
Place a hard taco shell inside the soft shell and wrap the soft shell around.
Squeeze to split the hard shell down the middle.
Splitting the hard shell helps to open up the taco to add the customers choice of ingredients easier.
Fish
Add one piece of fish as shown above.
Pico de Gallo
Add a taco portion of Pico de Gallo.
Cilantro
Add a taco portion of cilantro.
Red Onion
Add a taco portion of red onions.
Lime Juice
Add a spray of lime juice to the taco.
Avocado Lime
Add one line of Avocado Lime sauce.
Southwest Sauce
Add one line of Southwest sauce.
Weigh Cheese
Weigh out 0.5 oz of Mixed Cheese.
Add Cheese to Taco
Add the mixed cheese to the taco. The taco is now ready to serve.
