Step 1
Start with a pan filled halfway with ice. Place lime juice, lemon juice, and a mixing cup on top of the ice, as shown above. Keep a pan of Kosher salt with a tablespoon next to the ice pan.
Step 2
Stock mixing bowls and spoons at the rice mixing station to save time. You may re-use rice mixing bowls for up to 1 hour.
Step 3
Having everything you need on hand for rice mixing together in one spot will save you time throughout the day. Remember to change out the ice in the pan as needed.
